Rub a pinch of flour between fingers |
Sharbati wheat flour is slightly grainy because of bran content. Excessive smoothness could imply fine wheat mix or maida blending- again, not in our process. |

Water Sedimentation |
Add a tablespoon of flour to a glass of water, stir and leave to stand 20-30 minutes. |
Pure wheat deposits in a thin even layer with a light yellow colour. Separation or floating particles may be an indication of impurities or starch addition. |

Lemon Reaction |
Add a few drops of lemon juice |

Aroma check |
Sprinkle flour on a dry hot pan or rub a small amount in the palm of your hand until it is warm. |
